Crunchy Cheddar Bran Muffins This is a recipe for a different muffin.We all know how expensive muffins are. Try these for the crunchy cheddar taste.
1 cup all-bran cereal 1 1/4 cups buttermilk or sour milk 1/4 cup shortening 1/3 cup sugar 1 egg 1 1/2 cups all-purpose flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. baking soda 1 cup shredded sharp cheddar cheese Preheat oven to 400F. Grease a 12 cup muffin tin. In a bowl, cover bran with buttermilk. Let stand until softened. In another bowl, combine shortening and sugar; cream until light and fluffy. Beat in egg. In another bowl, sift together flour, baking powder, salt and baking soda. Add to creamed mixture alternatelywith bran mixture; stir in cheese. Spoon batter into prepared muffin tin, filling each cup three-quarters full. Bake for about 30 minutes.
