2 cups all-purpose flour 1 pkg active dry yeast 2 tsp ground cinnamon 1/2 cup cream-style cottage cheese - I use small curd and just put it in the blender for a few secs 1/2 cup water 1/4 cup sugar 1 Tbs butter/margarine 3/4 tsp salt 1 egg 1/2 cup toasted wheat germ 3/4 cup raisins
Stir together 1 cup of the flour, yeast and cinnamon; set aside. In a medium saucepan, heat and stir cottage cheese, water, sugar, butter and salt until warm - 120-130 degrees - and butter is almost melted. Add to the flour mixture; add egg. Beat on low speed for 30 seconds, scraping bowl constantly. Beat on High speed another 3 minutes. Stir in wheat germ, raisins and remaining flour - batter will be stiff. Spoon batter into a well-greased 8x4x2" loaf pan; cover; let rise in a warm place until nearly doubled in size - about 50-60 minutes. Bake at 375 for 30-35 minutes or until hollow sound when tapped. If necessary, cover with foil last 10 minutes to prevent over-browning. Remove from pan. Serve warm or cool. Makes 1 loaf. Double or triple the recipe if you want to make more loaves. Again, this requires no kneading and rises only once.
