Peanut Butter And Banana Muffins 1 cup of all-purpose flour 3/4 cup of uncooked rolled oats (quick or old-fashioned) 1/3 cup of firmly packed brown sugar 1 tablespoons of baking powder 1 cup of milk 1/2 cup of peanut butter 1/2 cup of mashed ripe banana 1 egg, beaten 2 tablespoon of vegetable oil 1 teaspoon of vanilla For The Topping: 1/4 cup of all-purpose flour 2 tablespoons of butter, melted 2 tablespoons of firmly packed brown sugar Heat oven to 375 degrees. Grease 12 medium muffin cups or line with paper baking cups. Combine flour, oats, brown sugar, and baking powder. Whisk together milk, peanut butter, banana, egg, oil, and vanilla; add to dry ingredients, mixing just until moistened. Fill prepared muffin cups 3/4 full. Combine the topping ingredients and sprinkle evenly over batter. Bake 16- 18 minutes or until golden brown. Serve warm.
