2 (1/4-ounce) packages active dry yeast or 5 teaspoons 1 3/4 cups milk 1/4 cup butter 2/3 cup pure maple syrup 3 3/4 cups all-purpose flour 1 (8-ounce) package cream cheese 1/2 cup almond, ground 3 cups milk
In a small bowl combine yeast and warm milk; let stand for 5 minutes. Meanwhile, cut together butter, maple syrup, and flour. Make a well in the center, and stir in cream cheese, and ground almonds. Pour in yeast mixture, blend together. On a floured surface knead for 5 minutes. Transfer dough to a lightly oiled bowl. Cover; let rise in a warm place for 45 minutes. Punch down dough and knead again for 4 minutes. Roll out dough to 1/2" thickness. Cut into 5" rounds. Place the buns on a lightly oiled cookie sheet. Bake in 400 degree oven for 8 to 10 minutes. Remove and let cool on wire rack. Makes 1 1/2 dozen.
