2 cups dry pancake mix 1/2 cup finely chopped pecans 1 teaspoons vanilla extract 1 teaspoon ground cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon ground ginger For the oil called for in the mix, use melted butter Water and egg as called for in the mix directions
In a small bowl, mix the nuts, spices, and extract together until the nuts are covered with spices. Prepared the pancake mix as directed on the package. Stir in the nut mixture, stirring no more than needed. Cook per the directions on the package.
Butter Pecan Syrup
2 cup granulated sugar 2/3 cups water 1/3 cup dark corn syrup 4 tablespoons butter 2 teaspoons vanilla extract or 1 teaspoon vanilla extract and 1 teaspoon rum extract 1/2 cup finely chopped pecans
Mix the sugar, water and corn syrup together in a saucepan. Bring to a boil, stirring as needed. Add the butter, extract, and nuts and stir.
Serve hot.
