POTATO RUSKS posted by Cajuns on www.recipe-recipes-message-board.com/forum/view_topic.php?id=4331&forum_id=37&jump_to=7854#p78541 c. Crisco shortening, not oil 1 c. sugar 1 c. mashed potatoes 2 tsp. salt 4 eggs, beaten 2 pkg. dry yeast (check the date on the pkg.) 2 c. warm water 8 c. flour Dissolve the yeast in the 2 cups of warm water. (Warm means that it should just barely feel warm on your wrist.) Mix all the ingredients together in order given. Cover and let rise to double. Divide the dough into 3-4 sections and roll each individually. Roll to 1/2 inch thick and cut with biscuit cutter or make a large circle with the dough and cut into triangles. Roll the triangles from the wide edge to the narrow point. Or you can roll the dough into a circle and spread with melted butter and sprinkle with sugar and cinnamon. Roll up the entire circle the longer way and then cut 1/2 inch sections off and place side by side in a slightly greased pan. After the rolls/cinnamon buns are made, let them rise to double. Bake at 325-350 degrees until lightly brown. Makes 3-4 dozen.
