Apple Banana Bread 1 banana 1/3 cup applesauce 1/2 cup vegetable shortening ( I used butter flavored Crisco stick) 3/4 cup sugar 2 eggs 3 TBSP buttermilk 2 cups flour, stirred and measured 1 tsp. baking soda 1/2 tsp. salt Mash banana; add enough applesauce to measure 1 cup; set aside. Cream together shortening and sugar. Add eggs; beat well. Add buttermilk (may be substituted with sour milk.....1TBSP milk plus 1 tsp. vinegar) and banana and applesauce mixture. Sift or mix together dry ingredients; add to creamed mixture; blend well. Pour into greased 8-1/2 x 2-1/2 x 4-1/2-inch loaf pan. Bake at 350 for 45 minutes or until done. Makes 1 loaf.
