Additional ingredients needed:
1 pound ground beef 3 quarts water 1 28oz. can diced tomatoes, undrained
In a 1 1/2 pint jar, layer the first eight ingredients in the order listed. Seal tightly. Yield: 1 batch.
Instructions to attach to jar:
Friendship Soup Mix:
To prepare soup: Carefully remove macaroni from top of jar and set aside. In a large saucepan or Dutch oven, brown beef; drain. Add the water, tomatoes and soup mix; bring to a boil Reduce heat; cover and simmer for 45 minutes. Add reserved macaroni; cover and simmer for 15 to 20 minutes or until macaroni, peas, lentils and barley are tender. Yield: 16 servings ( 4 quarts)

Seasoned Bean Soup Mix In A Jar
For the dried beans mixture Mix 1/2 cup of each of the following: kidney beans split yellow peas black beans red lentils small red beans split green peas
For the seasoning mixture: 1 tablespoon dried sweet pepper flakes 2 teaspoons chicken bouillon granules 2 teaspoons dried minced onion 1 1/2 teaspoons salt 1 teaspoon dried parsley flakes 1/2 teaspoon black pepper 1/2 teaspoon garlic powder 1/2 teaspoon celery seed 4 tablespoons brown sugar
Layer each type of bean in a clear 24 ounce gift jar/container. Combine the seasonings and place in a resealable plastic bag. This can be placed inside the jar or attached to the outside of the jar.
Attach to jar and give with recipe for Seasoned Bean Soup. Yield: about 3 cups dried bean mix and 1/4 cup seasoning mix.
Attach To Jar:
Seasoned Bean Soup
3 cups dried bean mix 2 14 1/2oz. cans stewed tomatoes 1/4 c. seasoning mix 1 teaspoon liquid smoke, (optional)
Rinse beans and place in a large Dutch oven or stock pot. Pour 4 cups boiling water over beans; cover and let soak overnight. Drain beans and return to stock pot. Add 6 cups water, cover, and bring to a boil over high heat. Reduce heat to low and simmer 1 to 1/2 hours or until beans are almost tender. Add tomatoes and seasoning mix, stirring occasionally, cover and simmer 30 minutes. Uncover beans and continue to simmer about 1 hour longer or until beans are tender and soup thickens. Serve warm. YIELD: about 10 cups soup.

Love Soup in a jar 18 cubes beef bouillon 1/4 cup dried minced onion 1/2 cup dried split peas 1/2 cup uncooked twist macaroni 1/4 cup barley 1/2 cup dry lentils 1/3 cup long-grain white rice 1 cup uncooked tri-color spiral pasta Use a canning funnel or any funnel that has about a 2-inch neck. This will make it easier to fill the jars with the ingredients. Be sure to use a wide-mouth, 1-quart canning jar. Layer ingredients in the order given: bouillon, onion flakes, split peas, small shape pasta, barley, lentils, rice, and enough tricolor spiral pasta to fill jar Attach tag with cooking instructions: In large kettle, brown 1 pound ground beef or stew beef cut into bite-size pieces in a little olive oil. Remove tricolor pasta from top of jar and reserve. Add the rest of the jar contents to the kettle with 12 cups water. Let come to a boil and simmer 45 minutes. Add tricolor pasta and simmer 15 minutes more. Onion Soup Mix
3 onion bouillon cubes, crushed 1 beef bouillon cube, crushed 2 tsp. cornstarch 1/3 cup instant onion flakes 2 dashes pepper
Put all ingredients in a small sandwich bag. Seal well and store in cool, dry place.
To use: Empty package into a pot and gradually stir in 4 cups cold water and 1 Tbsp. butter. Bring to boil, reduce heat and cover. Simmer 20 minutes. Ladle soup into oven proof bowls, sprinkle with croutons or toasted bread. Then add one slice provalone cheese. Briefly put bowls under a broiler to melt cheese. Serve. Makes 4 1-cup servings.
Onion Dip: Mix one package onion soup mix with 2 cups sour cream. Chill before serving.

Country Pasta Soup
1/2 c. barley 1/2 c. dried split peas 1/2 c. uncooked rice 1/2 c. dry lentils 2 tbsp. dried minced onion 2 tbsp. dried parsley 2 tsps. salt 1/2 tsp. lemon pepper 2 tbsp. beef bouillon granules 1/2 c. uncooked alphabet pasta 1 c. uncooked macaroni
Use a 1 quart, wide-mouth canning jar. Pack each layer. Mix the dried onion, parsley, salt, lemon peper, and the bouillon together in a small bowl and set aside. To the jar add the barley, the peas, the rice, the lentils, the mixed seasonings from the bowl, the alphabet pasta, and the macaroni. Seal and decorate the jar, and attach the recipe tag.
Country Pasta Soup You will need: 3 quarts water 2 stalks chopped celery 3 sliced carrots 1 1/2 c. shredded cabbage 1 16oz. can diced tomatoes, or 2 c. freshly chopped Fill a large pot with the water. Pour in the contents of the jar and stir. Add the celery, carrots, cabbage and tomatoes and stir. Simmer for 55 to 60 minutes or until the vegetables are cooked thoroughly.

Potato Soup Mix
1 3/4 c. instant mashed potatoes 1 1/2 c. dry milk 2 tbsp. instant chicken bouillon 2 tsp. dried minced onion 1 tsp. dried parsley 1/4 tsp. ground pepper 1/4 tsp. dried thyme 1/8 tsp. turmeric 1 1/2 tsp. seasoning salt
Use a 1 quart, wide-mouth canning jar. Combine all the ingredients together and then pour into the jar. Pack firmly. Seal and decorate jar, and attach the recipe tag.
Potato Soup You will need: 1 c. boiling water 1/2 c. soup mix Pour the soup mix into a bowl. Add the boiling water, and stir. Serve with bread or crackers if desired.

Rice + Pasta Soup Mix
1/3 cup loose beef bouillon granules 1/4 cup dehydrated onion flakes 1/2 cup split peas 1/2 cup of pasta shells 1/4 cup barley 1/2 cup lentils 1/3 cup non-instant white rice colored spiral pasta
Use a 1 quart, wide-mouth canning jar. Pack each layer. Into the jar add the bouillon, the onion flakes, the split peas, the shell pasta, the barley, the lentils, the rice, and the colored pasta. Seal and decorate jar, and attach the recipe tag.
Rice + Pasta Soup You will need: 1 lb. ground beef 12 c. water Remove the colored pasta from the jar and set aside. Brown the ground beef, drain off the fat. Place the meat, the contents of the jar and the water into a pot. Bring to a boil, lower heat and simmer for 40 minutes. Add the colored pasta and simmer 20 more minutes. Serve.

Tortilla Soup Mix
1 c. long grain rice 2 1/2 c. crushed tortilla chips 1 5oz. can chicken meat 2 tsp. chicken bouillon granules 2 tsp. presweetened lemonade powder 1 tsp. lemon pepper 1 tsp. dried cilantro leaves 1/2 tsp. garlic powder 1/2 tsp. ground cumin 1/2 tsp. salt 1/4 c. dried minced onions
Use a 1 quart, wide-mouth canning jar. Pack each layer. Use a small bowl to mix the bouillon, lemonade powder, pepper, cilantro, garlic, cumin, salt and minced onions together. Pour the mixed seasonings into a resealable plastic bag and set aside. Into the jar, put the rice, the seasoning bag and flatten so the bag is visible on all sides of jar. Pour in the tortilla chips, filling to top. Seal and decorate the jar. Attach the can of chicken to the jar lid, and attach the recipe tag.
Tortilla Soup You will need: 10 c. water 1 16oz. can diced tomatoes with green chiles Remove the tortilla chips carefully from jar and set aside. Remove the seasoning packet also and open the chicken can. Pour the rice in a large pot. Add the water, the tomatoes, the chicken and the seasoning packet. Bring to a boil, then reduce heat. Cover and simmer for 15 to 20 minutes. Pour in the tortilla chips and cover and simmer for 4-5 minutes. Serve.

Turkey Noodle Soup You will need: 8 c. water 2 sliced carrots 2 stalks diced celery 1/4 c. raw minced onion 3 c. chopped cooked turkey Use a large pot to combine the contents of the jar with the water and mix well. Add the carrots, celery and onions. Bring to a boil. Cover and simmer for 15-20 minutes. Remove the bay leaf and add the turkey. Continue simmering for 4-5 minutes longer. Serve.

Cream Of ? Soup Mix in a Jar 2 c. instant milk 3/4 c. cornstarch 1/4 c. instant chicken bouillon 1 tsp. onion powder 1/2 tsp. dried thyme 1/2 tsp. dried basil 1/4 tsp. pepper
Combine all the ingredients together. Pour into a jar. Seal, decorate and attach card.
Cream Of ? Soup Mix: To make in place of any recipe calling for a can of cream of celery, chicken or mushroom soup: Replace with 1/3 c. of the mix and 1 1/4 c. water. Boil for a few minutes, stirring often.
To make as a soup base: Combine 1/3 c. mix and 1 1/2 c. water. Bring to a boil while stirring often. Add a vegetable for more flavor, such as diced celery (for cream of celery soup), diced potatoes (for cream of potato soup), or some sliced mushrooms (for cream of mushroom soup), or some diced broccoli (for cream of broccoli soup).

Use a wide mouth 2 cup jar. Layer ingredients in order given. Seal and decorate jar. Attach recipe tag. Chicken Noodle Soup You will need: 1 jar of soup mix 8 cups water 1 1/2 c. frozen corn or mixed vegetables 2 c. diced cooked chicken or turkey Bring the water to boil in large saucepan. Stir in soup mix. Cover, reduce heat and simmer for 25 minutes. Discard bay leaf and stir in corn and chicken. Simmer 5 minutes, or until vegetables are tender and chicken is heated through.

Beef Barley Soup Mix
3/4 c. medium pearl barley, separated in half 1/2 Cc dried lentils 2 tbsp. dried parsley flakes 1/4 c. dried minced onions 1/4 c. instant beef bouillon 2 tbsp. dried celery flakes 1/2 tsp. dried thyme leaves 2 bay leaves 1/4 tsp. black pepper 1/4 tsp. dried minced garlic
Use a wide mouth 1 pint jar. Layer 1/2 barley, then the rest of the ingredients and then the other 1/2 barley. Seal and decorate jar. Attach recipe tag.
Beef Barley Soup You will need: 2 lb. boneless beef chuck, ...cut in 1/2 - 3/4 inch pieces ...or 2 lb. lean hamburger 1 tbsp. vegetable oil 1 jar mix 10 c. water Heat oil in Dutch type pot oven over medium heat and brown the meat. Pour off drippings. Add soup mix and water. Bring to a boil. Reduce heat; cover tightly and simmer 1 1/2 - 1 3/4 hours or until beef is fork tender. Discard bay leaves. Makes 8 servings.

Palouse Soup Mix in a Jar
2 1/2 C. green split peas (16 oz. pkg.) 2 1/2 C. lentils (16 oz. pkg.) 2 1/2 C. pearl barley (16 oz. pkg.) 2 C. alphabet macaroni (8 oz. pkg.) or brown rice 1 C. dried onion flakes (two 3/8 oz. pkg.) 1/2 C. celery flakes (1 3/8 oz. pkg.) 1/2 C. parsley flakes (1 1/4 oz. pkg.)
Optional 1 1/2 tsp. thyme 1 1/2 tsp. white pepper
Makes 10 cups of mix.
Mix all ingredients together. Store in a jar with a tight fitting lid. Stir before using. Attach the following instructions to the jar if giving as a gift:
Palouse Soup
Stir contents of jar before using. Combine 1 cup of soup mix with 4 cups of water or seasoned stock in large pan. Add 1 cup of cooked chopped meat, if desired. Bring to a boil. Reduce heat to low and cover pan. Simmer gently for 45 to 60 minutes, or until peas are tender. Add 1/2 teaspoon of salt, if desired.
Minestrone Variation:
Combine 1 cup of soup mix with a 16 ounce can of stewed tomatoes, 2 to 3 cups of water or stock, 1 chopped carrot, 1 to 2 chopped potatoes, and 1/2 teaspoon basil (optional: 1 clove minced garlic). Bring to a boil. Reduce heat to low and cover pan. Simmer 45 to 60 minutes or until peas are tender. Add 1/2 teaspoon of salt, if desired.

Combine all ingredients in a plastic bag or layer in an air- tight container. Store, tightly sealed, until needed. Add the following recipes when giving the gift:
BASIC HEARTY BEAN SOUP: Combine contents of package with 7 cups water in a 3-quart saucepan. Bring to boiling; reduce heat. Cover and simmer 2 minutes. Remove from heat, cover, and let stand 1 hour. (Or soak bean mixture in the water overnight in a covered pan.) Do not drain. Bring beans and liquid to boiling, reduce heat. Cover and simmer 1-1/2 to 2 hours or until beans are tender. Remove bay leaf. Season to taste. Makes 6-8 side dish servings.

Cover and simmer 1 hour for pork hocks or 1-1/2 hour for beef shanks. Remove meat, chop coarsely and return to soup. Remove bay leaf. Add 1> 16-oz. can tomatoes, cut up and undrained. Add one medium carrot, chopped. Cover and simmer for 30 more minutes. Season to taste. Makes 4-6 servings.
Spicy Bean Pot:
Follow basic recipe but reduce water to 5-1/2 cups. Remove bay leaf. Brown 1/2 pound ground beef and drain off fat. Add 1 tsp. chili powder and cook 1 minute. Add to bean soup along with 1 10-oz. can Rotel. Heat through, stirring occasionally. Season to taste. Serve in tortilla bowls or with corn chips. Garnish with jalapenos, if desired. Makes 6-8 main-dish servings.
Cheesy Bean Soup:
Follow basic recipe through the soaking step, except reduce water to 4 cups. Remove bay leaf. Mash beans slightly. Add 2 cups milk and 6-oz. cubes of cheese (American, Cheddar, or smoked). Cook and stir until beans are soft. Makes 4-6 main dish servings.

Jambalaya Mix in a Jar
Makes three 1 plus cup containers
3 C. uncooked long-grain rice 3 T. dried minced onion 3 T. dried parsley flakes 4 tsp. beef bouillon granules 1 T. dried minced chives 1 T. dried celery flakes 1 1/2 tsp. pepper 3/4 tsp. cayenne pepper 3/4 tsp. garlic powder 3/4 tsp. dried thyme
In a large bowl, combine all ingredients. Divide evenly among three airtight containers (there will be a little over 1 cup in each container). Store in a dry, cool place for up to 6 months.
Jambalaya
In a saucepan, bring 2 cups water and 1/2 cup chopped green bell pepper to a boil. Stir in one portion of the dried mix; return to a boil. Reduce heat, cover and simmer for 18 to 20 minutes, or until the rice is tender.
In another saucepan, heat 8 ounces of tomato sauce and 1 pound of fully cooked, smoked sausage that has been cut into 1/4-inch slices.
Meanwhile, in another saucepan, cook 1 pound of medium-sized, peeled, de-veined shrimp in water until pink and cooked through. Drain. Stir shrimp into sausage mixture. Spoon rice onto plates and spoon the sausage-shrimp mixture on top. Makes 4 to 6 servings.

CHICKEN & RICE CASSEROLE MIX Gifts In A Jar: For The Slow Cooker
3/4 cup powdered coffee creamer 1 1-ounce package Hidden Valley Ranch dressing mix 1/2 cup Parmesan cheese 3/4 cup sliced almonds, toasted and cooled completely* 1/4 cup real bacon bits 1 3/4 cups white rice
Layer the ingredients in the order given into a wide-mouth 1-quart canning jar. Pack each layer into place before adding the next ingredient. Attach a gift tag with the cooking instructions. *To toast almonds, place nuts in a single layer on a baking sheet. Bake at 350ºF for approximately 10 minutes or until nuts are golden brown. CHICKEN & RICE CASSEROLE
Chicken & Rice Casserole Mix 4 1/2 cups water 1 to 1 1/2 pounds chicken breast, diced
Empty contents of Chicken & Rice Casserole Mix into slow cooker, stirring to combine. In a saucepan, bring water to a boil. Pour water over rice mixture and stir. In a sauté pan, brown chicken. Add to crock and stir. Cook on high for 2 1/2 to 3 hours, stirring occasionally.

Rainbow Bean Soup Mix In A Jar
Ingredients for pint jar (use a moisture free jar)
½ cup or more of each of the following beans:
Dried red beans Great Northern beans Dried peas or yellow split peas or lentils Black beans Seasonings:
Mix and place in a thin zipper sandwich bag.
1 Tbsp. Dried minced onion 1 Tbsp. Beef bullion granules 1 Tbsp. Dried parsley flakes 1 tsp. Dried basil 1 tsp. Powdered lemonade mix with sugar ¾ tsp. Chili powder ½ tsp. Garlic powder ½ tsp. Pepper ½ tsp. Dried oregano Place ingredients in jar in this order:
Place ½ cup of each type of beans in jar in the order listed above. Top with seasoning bag. Gently flatten bag so it can be seen from all sides of jar. Put lid on jar. Decorate jar. Attach recipe to jar. Recipe for Rainbow Bean Soup
Remove seasoning packet. Set aside. Rinse beans. Place beans in a large microwave safe dish. Cover with water 1” to 2” over top of beans. Cover dish loosely with plastic wrap. Microwave on high 10 minutes, rotating after 5 minutes. Drain and rinse beans very well. Place beans in a large pan. Add 4 cups of water and 1(14 oz) can crushed tomatoes and seasonings from packet. (you may choose to also add 1 small can of chopped ham.) Cover, bring to a boil. Lower heat, cover pan and simmer 1 ½ hours or until beans are tender. Stir occasionally. Makes 12 cups of soup.
