1 1/4 cups sugar 1/2 cup mashed banana 1/2 cup milk 1/3 cup buttermilk 1 tablespoon egg substitute 1 teaspoon oil 1 teaspoon vanilla 1/2 teaspoon banana flavoring 1/4 teaspoon lemon extract 1 1/2 cups flour 1/2 teaspoon baking soda 1/2 teaspoon baking powder 3/4 teaspoon salt
1. Preheat oven to 350 degrees. 2. Combine sugar, banana, milk, buttermilk, egg substitute, oil, vanilla, banana flavoring and lemon extract in a large bowl. Mix well with electric mixer on high speed. 3. In a medium bowl combine flour, baking soda, baking powder, and salt. 4. Mix the dry ingredients into the wet ingredient with the electric mixer. 5. Pour batter into muffin cups in a muffin pan until each cup is about 2/3 full. 6. Bake for 25 to 30 minutes or until muffins turn light brown on top.
This has a 3 point count. And makes 12 muffins.

I'm glad you were interested in this recipe. I really like to post recipes and look for recipes for people. I think it is fun to do. Sure does beat the tv. A lot of times there is nothing on the boob tube. This is more fun and less stressful.Hope you enjoy.Have a good day.

Sounds like a wonderful recipe. Do you think you could use splenda instead of sugar. That would cut the point a little too.

You probally could use splenda. I didn't think of it .I don't think it would be a problem at all. If you try it let me know how they turned out and I'll change the recipe.Thanks for the input.
