:)Crustless Pumpkin Pie 1 can pumpkin (15 ounce) 1 can evaporated skim milk (12 ounce) 3/4 cup egg substitute, or 3 egg whites, or 2 whole eggs 1/2 tsp. salt 3 tsp. pumpkin pie spice 1 tsp. vanilla 2/3 cup Splenda or sugar Combine all ingredients and beat until smooth. pour into a 9 in. sprayed pie pan. Bake at 400 degrees fpr 15 minutes. Then reduce heat to 325 degrees for 45 minutes. 8 servings--may top with Cool Whip--I tried this tonight for the first time and it was great!
