Raspberry Muffins (2 WW {Points)

1 Cup Whole Grain Flour -- (pastry flour) 1/2 Cup All-purpose flour 2 teaspoons Baking Powder 1 teaspoon Baking Soda 1/4 teaspoon Salt 3/4 Cup buttermilk -- reduced fat 3 Tablespoons Vegetable Oil 1 Large Egg 1/3 Cup Sugar 1 teaspoon Grated Lemon Peel 1 cup Raspberries
Preheat the oven to 400°F. Coat a 12-cup muffin pan with cooking spray.
In a large bowl, stir together the buttermilk, oil, egg, sugar, and lemon peal until well blended. Stir int he flour mixture until just combined. Do not overmix. Gently fold in the raspberries.
Divide the batter evenly among the prpeared muffin cups, filling them about two-thirds full. Bake for 12 to 15 minutes, or until a wooden pick inserted in the center of a muffin comes out clean.
