Marinade: 1 T soy sauce 1 T dry sherry or orange juice 1 t cornstarch
2 medium wild duck breasts cut in cubes (apx 1/2 lb) 2 t vegetable oil 1 t fresh ginger 1 red pepper cut in strips 1 small can pineapple chunks, drained 1 small onion cut in cube 1 t soy sauce 1T chicken stock 3 T plum sauce
Marinate cubed duck 4 or more hours. Heat oil in wok and stir fry drained duck (reserve the marinade) onions and peppers for 2 minutes. Add pineapple. Combine soy sauce, stock and plum sauce with reserved marinade and add to wok. Cook 1 minute. Serve over rice.
