This is the chili that I grew up on and that my dad has made every deer season as far back as I can remember. I love it and hope that someone else out there will try it and love it too.
Melt 2-3 tablespoons of bacon drippings or butter into a skillet. Saulte' 1/2 cup of onions and/or 1/2 clove garlic, chopped. Add 1-2 lbs of vension, lamb or ground beef (which ever you prefer, but vension is the best) stir and saulte' meat and onions until the meat is well done. Drain.
Then add to meat and onions: 1 1/4 cup canned tomatoes 3-4 cups kidney beans 2 cans of spicy chili beans (undrained) 3/4 tsp salt or little more for flavoring 2 bay leaves 1 tsp sugar 1/2 cup of beer 2 tsp- 2 tbsp of chili powder 1 packet of chili seasoning 1 large can of tomato juice NO WATER!! This only takes away from the flavoring. Heinz Chili Sauce (ONLY TO THICKEN, IF NEEDED) 1-2 cans of tomaotes w/ green chili's 1/4 cup or a little less brown sugar 2-3 cups macaroni and/or spaghetti (I use both)
Let cook/simmer 3-4 hours, stirring often so it doens't stick to bottom of pan. The longer it cooks the better it is.I am not sure how many servings there are to this recipe, because I make a HUGE pot. Hope you enjoy this as much as I do. ;D
