3 - 4 pounds top round steak 2 tsp. salt 1/2 tsp. pepper 1/4 cup olive oil 2 cloves garlic, minced 3 Tbsp. apple juice 1/4 cup balsamic vinegar 8 cups baby spinach, washed and dried 4 ripe tomatoes, quartered 1/2 cup fresh Parmesan cheese, grated
In a large nonstick skillet, place 1 tsp. salt and fry steak over medium heat until steak is cooked medium rare or to your liking. Set steak aside. Combine 1 tsp. salt, pepper, olive oil, garlic, apple juice and balsamic vinegar in a cruet and shake well. Place spinach and tomatoes in a large bowl, add dressing and toss. Slice steak in thin strips and place with spinach and tomatoes, toss again and sprinkle with Parmesan cheese. You can also use additional ingredients for the salad including different types of lettuce, cucumbers and different garnishes such as black olives or kidney beans.
The Skinny: Use the leanest steak you can find and trim away the excess fat.
