1 1/2 lb. ground beef 1/2 cup bread crumbs 1 egg, beaten 1 tsp. instant minced onion 3/4 tsp. salt 1/2 tsp. oregano 1 (8 oz.) can tomato sauce (divided) 1 1/2 cups shredded mozzarella cheese 1 (4 oz.) can of sliced mushrooms, drained (Optional)
In a large bowl, combine beef, crumbs, egg, onion, salt and oregano. Stir in 3/4 cup tomato sauce; set aside.
Cut two pieces of waxed paper 15" long. Place meat mixture in between the 2 pieces of wax paper. With a rolling pin, press meat into a 13 x 9 rectangle. Remove top piece of wax paper.
Sprinkle with cheese and mushrooms. Roll up meat; jelly style fashion starting at narrow end, using wax paper to help. Seal ends securely.
Place seam side down in a nonstick loaf pan .
Bake at 400 degrees for 30 minutes. Drain off any fat and cook for another 40 minutes.
For a Pepperoni Pizza Meatloaf, add pepperoni slices in along with the mushrooms and cheese.
