=========================================================== Ready in: 20 minutes Servings: 4 Ingredients: 1 lb. Ground beef 1 Small onion, chopped 1 can (28 oz.) Diced tomatoes, undrained 1 can (10-1/2 oz.) Beef Broth (1-1/3 cups) 1 cup Frozen mixed vegetables, thawed 2 cups MINUTE White Rice, uncooked 3/4 cup (3 oz.) Grated Parmesan Cheese Directions: Brown meat and onion in large skillet on medium-high heat; drain. Add tomatoes, broth and vegetables to skillet; stir. Bring to boil. Stir in rice and cheese; cover. Remove from heat. Let stand 5 minutes. Sprinkle with additional Parmesan cheese, if desired.
