Easy Butter Cake
1/2 cup butter, softened 1/2 cup sugar 2 eggs 1 cup flour 1/2 tsp. baking powder 1/2 tsp. vanilla
Directions: Heat oven to 350 degrees. Cream together butter and sugar until light and fluffy. Beat in the eggs at high speed until very light and fluffy. Sift together flour and baking powder. Fold into batter. Stir in vanilla. Pour into buttered 8" square cake pan and bake for 20-30 minutes, until light golden brown, and cake begins to pull away from sides of pan. Serve it with fruit (fresh or stewed), ice cream, Redi-whip with a hint of your favorite spice on the top (pumpkin pie> yum!) or jam and powdered sugar.
