Crisp Little Lemon Cookies
1 Pkg. Lemon cake mix with pudding included 1 cup Rice Krispie cereal 1/2 cup butter or margarine > melted 1 egg - slightly beaten before adding
Directions: Preheat oven to 350 degrees
In a large bowl, combine all of the ingredients and mix well. Shape into 1-inch balls, then flatten them with the palms of your hands. Place 2 inches apart on an ungreased baking sheet. Bake for 9-12 minutes or until light golden brown around the edges. Cool on the baking sheet for 1 minute before removing.
NOTE: I top off my cookies with yellow colored sugar before baking, both for the look and taste that the sugar adds. You can buy colored sugar at cake supply stores, or make your own by putting some sugar in a baggie with a few drops of yellow food coloring or paste. Zip lock the bag and shake well! You can also add a drop or two of lemon extract, if you REALLY love the lemon flavor! Personally, these are lemony enough for me!
