Soft Sugar Cookies
3 3/4 c. flour 1 tsp. baking powder 1/2 tsp. salt 1 c. softened butter 1 1/2 c. granulated white sugar 2 eggs 2 tsp. vanilla extract colored sparkling sugar (a recipe is below)
Sift flour, baking powder, and salt together. Set aside. Use a large bowl to cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually blend in the dry ingredients until well blended. Cover dough, and chill for 2 hours. Preheat oven to 400. Grease baking sheets. On a floured surface, roll out small portions of chilled dough to 1/4" thickness. Cut out shapes using cookie cutters. Sprinkle with colored sugar. Bake 6 - 8 minutes, or until edges are barely brown. Remove from cookie sheets to cool on wire racks.
Colored Sparkling Sugar 3 c. granulated white sugar 1 c. food coloring
Preheat oven to 150. Stir sugar and food coloring together. Spread in a shallow baking pan. Place in the oven for 20 minutes, stirring every 5 minutes. Remove when the liquid has evaporated. Let cool. Store in a tightly covered container.
