No Bake Prune Cookie Bars
1 1/2 c. shortening
1 1/2 c. white granulated sugar
3 tbsp. light corn syrup
1/2 tsp. vanilla
3 c. finely chopped prunes
3 1/2 c. graham cracker crumbs
powdered confectioners sugar for sprinkling
Coat 9x13x2" baking pan with butter cooking spray.
Use a large saucepan to combine the shortening, sugar,
syrup and vanilla.
Cook until the shortening has melted.
Beat vigorously.
Remove from the heat and stir in the prunes.
Gradually stir in the crumbs.
Press evenly into the baking pan.
Cover and refrigerate until chilled and set, approximately
1 hour.
Sprinkle with powdered sugar and cut into bars.
