Potato Chip Cookies
1 c. shortening
1 c. powdered confectioners sugar,
...plus extra for sprinkling
1 1/2 c. flour
1 tsp. vanilla
1 1/2 c. crushed potato chips
Reheat oven to 350. Use ungreased baking sheets.
Cream the shortening and sugar together.
Stir in the flour.
Beat in the vanilla.
Fold in crushed chips.
Drop by teaspoonfuls onto the baking sheets.
Bake for 15 - 18 minutes, until light in color.
Sprinkle with some powdered sugar.
Cool on wire racks.
