1 3/4 c self-rising whole wheat flour 1/4 c cocoa powder pnch salt 3/4 c soft margarine 3/4 c light brown sugar few drops vanilla extract 4 eggs 3 oz white chocolate, coarsely chopped
White Chocolate Sauce: 3 oz white chocolate 2/3 c light cream 2 - 3 T milk
Preheat the oven to 325 degrees F. Sift the flour, cocoa powder and salt into a bowl, adding back in the whole wheat flakes from the sieve. Cream the margarine, sugar and vanilla extract together until light and fluffy, then gently beat in one egg. Gradually stir in the remaining eggs, one at a time, alternately folding in some of the flour, until all the flour mixture is well blended in. Stir in the white chocolate and spoon into a 1 1/2 - 2 lb loaf pan or a 7in greased cake pan. Bake for about 30 - 40 minutes, or until just firm to the touch and shrinking away from the sides of the pan. Meanwhile, prepare the sauce. Heat the chocolate and cream very gently in a pan until the chocolate is melted. Add the milk and stir until cool. Serve the cake sliced, in a pool of sauce and decorated with chocolate leaves and curls. Makes 10 - 12 slices
