APPLE HARVEST CAKE
4 cups apples, chopped
2 cups sugar
3 cups flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
½ tsp. nutmeg
2 eggs
1 cup oil
1 tsp, vanilla
1 cup walnuts, chopped
Mix apples and sugar and let stand 1 hour.
Add the remaining ingredients.
Pour into a greased and floured Bundt or tube pan,
Bake at 350º for 1 hour and 15 minutes.
