Shortbread Cookies
2 c. butter 1 c. sugar 1 tsp. vanilla 1/2 tsp. salt 4 c. flour
Directions: Cream butter and sugar together, add the vanilla. Combine salt and flour and mix into the butter and sugar mix. Knead until smooth. Make a large ball, wrap in plastic and refrigerate at least 30 minutes, overnight is ok too. Roll out to 3/8 inch thick onto a floured surface. Cut into 1" x 2 1/2" rectangles with a knife/pastery cutter. Arrange on ungreased cookie sheet and prick each with a fork several times. Bake at 300 degrees for 30 minutes.
