Pecan Crisps
1 c. sugar 3/4 c. softened margarine 1 egg 1-1/2 tsp. vanilla 1/8 tsp. salt 1-1/4 c. ground pecan nuts 2 c. flour 1/2 tsp. baking soda * Make up a small bowl of sugar and cinnamon (optional)
Directions: Mix into a soft dough, chill. Form into small balls, lightly roll in some cinnamon sugar (optional- can be without sugar coating), and press flat with bottom of glass or spatula. Bake at 350 degrees for 10 minutes. Cool one minute on the cookie sheet, and remove to a wire rack.
