Applesauce Spice Cookies1 c. light brown sugar
1/2 c. margarine
Cream these two together and then add:
1 egg, beaten
1 c. applesauce
1/2 c. quick oatmeal
1 3/4 c. flour
1-1/2 tsps. pumpkin pie spice
1/8 tsp. salt
1 tsp. baking soda
Mix well and drop by teaspoonful onto cookie sheet. Bake at 350 degrees for 12-15 minutes. Watch during last few minutes for desired color. Rest one minute on the cookie sheet, and then remove to a wire rack.
