Ho-Ho Cake
Ingredients:
CAKE: 1 Pillsbury Devil's Food Cake Mix
CREAM FILLING: 1/4 C Butter 1/4 C Vegetable Shortening 2 C Powdered Sugar 2 t Vanilla 2 to 3 T Milk 1 C Marshmallow Fluff
CHOCOLATE GLAZE: 12 oz. Chocolate Chips 2 T Vegetable Oil
Directions: Prepare cake mix as directed. Bake in a greased and wax paper lined 10 X 15 jelly roll pan at 350 degrees for 15 to 20 minutes.
Turn cake out onto a towel that has been dusted with powdered sugar. Peel off wax paper. Roll cake in towel and allow to cool.
For filling: beat together the butter, shortening, sugar and vanilla until fluffy. Add milk one tablespoon at a time, adding just enough so the filling is spreadable. Mix in the Fluff.
Unroll cooled cake and spread filling evenly over cake. Roll cake back up jelly roll style.
Glaze: Melt chocolate chips and oil. Spread over cake roll and allow glaze to cool and harden.
Slice and serve.
Serving Suggestions Use Pillsbury brand cake mix - it tastes just like the real thing. Use the same recipe for cup cakes, just pipe the filling into the bottom of a cup cake (through the paper liner) with a pastry bag.
