SWEET POTATO POUND CAKE
2 sticks butter
2 c. sugar
2 1/2 c. mashed and cooked
sweet potatoes
4 large eggs
3 c. plain flour
2 tsp. soda
1/4 tsp. salt
1/2 tsp. nutmeg
1 tsp. cinnamon
1 tsp. vanilla
1/2 c. chopped pecans
Cream butter and sugar. Add sweet potatoes and beat until light and
fluffy. Add eggs, one at a time, beating well after each. Combine dry
ingredients and stir into creamed mixture. Add nuts and vanilla. Pour
mixture into a greased tube pan. Bake at 350 degrees for 1 hour and 15
minutes.
