Serves 4
1 lb 4 oz. all-purpose potatoes, pared and cut into 1/4" sticks 1/2 tsp freshly ground black pepper 1/4 tsp salt Four (3 oz) lean boneless beef sirloin steaks (1" thick) 1/4 cup steak sauce 1/2 cup shallots 4 garlic cloves, minced Fresh flat-leaf parsley sprigs to garnish
Preheat oven to 450 deg F. Spray nonstick baking sheet with nonstick cooking spray.
Place potato sticks into a single layer onto prepared baking sheet; sprinkle evenly with 1/4 tsp. of the pepper and the salt. Bake, turning potato sticks occasionally with spatula, 12-15 min., until crisp and golden brown. Transfer potatoes to a large serving platter, keep warm.
Increase oven temperature to broil. Spray rack in broiler pan with nonstick cooking spray. Brush 1 side of the steaks with the steak sauce; place unto prepared rack, brushed-side up. Broil 4" from the heat 4 min. Turn steaks over; brush with remaining steak sauce. With fork, press shallots, garlic and remaining 1/4 tsp. pepper into steaks; broil 3 min., until steaks are cooked through.
Place steaks onto serving platter with potatoes; garnish with parsley.
