Lola's Kobe beef and Caramelized endive
Ingredients:
1 head of Endive (leaves removed)
2 oz. sugar
2 oz. white balsamic vinegar
1 oz. butter
2 T olive oil
2/8oz. kobe beef filet or strip
1 T grain mustard
1 T chopped terragon
Cooking Instructions:
1. In one pan heat 1/2 olive oil over medium heat.
2. Add endive & brown on both sides.
3. Add sugar & vinegar and continue to cook for 2
minutes.
4. Remove from heat and finish with mustard and
terragon, butter and set aside.
5. Take remaining olive oil and heat over high
heat.
6. Season beef and brown for 2 minutes on each
side, place in 400 degree oven and cook to
desired doneness.
7. Place endive in center of plate and top with
sliced beef. drizzle remaining sauce over beef
and serve.
