Cinnamon Pudding Cake
Ingredients
2 cups all-purpose flour
1 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 teaspoons ground cinnamon
1 cup milk
1 3/4 cups packed brown sugar
1 1/2 cups water
2 tablespoons butter
1/2 cup chopped walnuts
3/4 cup apple - peeled, cored and chopped
Directions
1 Preheat oven to 350 degrees F (175 degrees C). Grease the bottom of a 9 inch square baking dish.
2 In a large bowl, mix together the flour, sugar, baking powder, salt and cinnamon. Make a well in the center and pour in the milk. Mix well and pour into prepared pan.
3 In a saucepan, combine brown sugar, water and butter. Bring to a boil and pour over batter in the pan. Sprinkle top with nuts and chopped apples.
4 Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Serve warm.
CINNAMON PUDDING CAKE
1 c. white sugar
2 tbsp. butter
2 tsp. baking powder
1 c. milk
2 c. flour, scant
1 tsp. cinnamon
Mix together and pour into greased 9x13 inch pan. Pour syrup over batter.
Syrup:2 c. brown sugar2 tbsp. butter1 1/2 c. cold water:
Mix together and bring to a boil. Pour over batter. Sprinkle 1 cup chopped nuts on top. Bake at 350 degrees for 30 minutes. When cold, serve with whipped cream and cut in squares.
Cinnamon Swirl Bundt Cake (D/P, TNT)
1 box yellow cake mix
1 box instant vanilla pudding
3/4 cup oil
3/4 cup water
3 eggs
1 teaspoon vanilla
1 teaspoon butter flavoring
1/3 cup sugar
2 teaspoons cinnamon
1/3 cup nuts
Mix cake mix, oil, pudding and water. Add eggs and beat well at high speed for 5 minutes. Add vanilla, and butter flavoring.
Grease pan well with margarine.
Mix sugar, cinnamon and nuts. Put 1/2 of this mixture in bottom of pan, then add 1/2 of cake mix and repeat.
Bake 40-50 minutes at 350° F.
Orange Cinnamon Bundt Cake (D/P, TNT)
1 pkg. yellow cake mix
1 pkg. vanilla instant pudding mix
4 eggs
1/2 cup oil
1/2 cup orange juice
Cinnamon Mixture:
1/4 cup sugar
1 tbsp. cinnamon
1 tbsp. cocoa
Combine cake mix, pudding mix, eggs, oil and orange juice and mix until light and fluffy.
Pour half of the batter into a greased Bundt pan.
Combine the sugar, cinnamon and cocoa in a small bowl. Sprinkle half of this mixture onto the cake batter. Then, pour the rest of the batter into the pan and sprinkle remaining cinnamon mixture on the top.
Bake at 350°F for 55 minutes.

1/2 cup sherry (Gallo or Fairbanks)
5 eggs

Mix cinnamon and sugar in a shaker. In a bowl, combine cake mix and pudding mix and make a well in the center. Beat in oil, sherry and eggs. Pour half the batter into a greased bundt pan. Sprinkle with half of the cinnamon-sugar mix. Pour the rest of the batter on top and sprinkle with the remaining cinnamon-sugar mix. Bake at 325 degrees F for 45 minutes.
Carlas Coffee Cake
1 box yellow cake mix ( no pudding)
1/2 cup milk
1/2 cup oil
4 eggs
8 oz. sour cream
1 box instant vanilla pudding
3 Tbsp. cinnamon
1/2 cup sugar
1/2 cup chopped pecans
In a small bowl mix together cinnamon, sugar, and chopped pecans.
Place 1/2 of cake mixture into prepared pan. Sprinkle 1/2 of sugar, cinnamon and pecan mixture on top. Wwirl into cake mix with fork. Pour rest of cake mix into pan and sprinkle with remaining sugar, cinnamon and pecan mixture. Swirl with fork.
Bake 45 min in a 350 degree oven. Serve hot.
