Carmen's Veal Scallopine Roman Style
Serves 4-6 people
1+1/2lb. veal scallopini pounded
6-8 tbsp. olive oil
1 clove chopped garlic
6 artichokes quarted sliced
4-6 oz. red roasted peppers julliene
4-6 Moonlight mushrooms
1+1/2 cup dry white wine
2 oz. butter
3-5 oz. flour
2 oz. chopped Italian parsley
In a large skillet heat olive oil, dust the veal with flour and sauteed for 2 minutes on each side or until golden. Add garlic mushrooms, roasted peppers, artichokes and wine ( be careful not to flame wine in your face). Let it cook for 3-5 minutes or until the liquid is reduced in 1/2. Now, drench butter in flour and add to sauce, add parsley mix well and serve immediately.
