Aunt Dee's Meatloaf A family favorite! 1 pound ground beef, (about 15% fat content) 1/2 cup rice, (precooked or minute rice) 1/2 cup chopped onion 1/2 cup seasoned bread crumbs 1/2 of 8 ounce can tomato sauce (reserve rest for topping) 1 egg, slightly beaten 1/4 cup parmesan cheese 1/2 teaspoon salt pepper to taste 1/2 teaspoon Italian seasoning or oregano Combine all ingredients until moist. Gently form into a loaf and place in a loaf pan or baking pan. Bake 50 minutes at 350*F. Remove from oven, top with the remaining 1/2 can tomato sauce and bake 10 minutes longer. Let rest 10 minutes before slicing. To increase recipe: The changes necessary for a 1 1/2 pound meatloaf are: 1 1/2 pounds ground beef (about 15% fat content) 3/4 cup seasoned bread crumbs 1/3 cup parmesan cheese 3/4 teaspoon Italian seasoning or oregano Increase oven temperature to 375*F. Note: I like to bake this in the meatloaf pan with the insert used for draining the fat during cooking. We also enjoy leftover slices in sandwiches with mayonnaise, a slice of cheese and some lettuce. Enjoy, -Shortcake
