Beef Fillets with Grapefruit
8 beef fillets approx 150 grams each 2 grapefruits (medium size) 125 gramos butter or margarine 1 tablespoon soy sauce 1 bit of cayena pepper 3 tablespoons vegetal oil 1 bundle of washed and disinfected cress salt and pepper to taste
Squeeze the juice of one grapefruit and reserve. Peel the other grapefruit in segments, remove the white skin and refrigerate. In a saucepan heat the oil and fry the beef fillets till they are well cooked and set aside. In the same saucepan fry the grapefruit juice, add the butter or margarine and let cook well till reduce, stirring constantly. Add fillets to the sauce and cook 3 to 5 minutes more, taste with salt and pepper. Serve fillets with cress and grapefruit segments and pour the sauce over it.
