Hawaiian Drop Cookies 2 cups sifted flour 2 tsp. baking powder 1/2 tsp. salt 2/3 cup shortening 1 1/4 cups sugar 1/2 tsp. vanilla extract 1/2 tsp. almond extract 1 egg 3/4 cup well drained crushed pineapple 1/2 cup finely shredded coconut (optional)
Sift flour, baking powder and salt together.Cream shortening, sugar and extracts; beat in egg until mixture is fluffy.Blend in pineapple and coconut and sifted dry ingredients. Drop by teaspoonfuls onto ungreased cookie sheet, spacing 3 inches apart. If desired, sprinkle tops with additional coconut.Bake in 325 degree oven for about 20 minutes. Cookies are better stored 24 hours before serving.
