3/4 cup bread crumbs, soaked in 1/2 cup water 1-1/2 lb. lean ground beef 1 large yellow onion, finely chopped 3 TB chopped parsley 1 tsp. dried mint leaves 1 tsp. dried oregano 2 cloves garlic, minced 1 TB olive oil 2 eggs 1 TB fresh lemon juice Salt and ground black pepper, to taste Flour for dredging 1 cup olive oil for frying (1/4" oil in the pan)
Squeeze the water from the bread crumbs and place in a mixing bowl along with the beef.
Add all other ingredients except the flour and oil for frying.
Mix well and form into small oblong meat balls.
Dredge each in flour and sauté in the olive oil until lightly browned. Don't cook them too long or they will dry.
~~~Sauce~~~ 1 can (14-1/2 oz.) crushed tomatoes, undrained or 4 ripe tomatoes, peeled and diced Pinch of sugar
Pour over cooked meat balls and simmer until heated through.
