Carrot Cake Servings: 8 Preparation Time: 20 Minutes Cooking Time: 30 Minutes 2 cup(s) , Sugar 2 cup(s) , Flour 2 teaspoon(s) , Baking Soda 1 teaspoon(s) , Salt 1 tablespoon(s) , Cinnamon 1 1/2 cup(s) , Vegetable Oil 4 large , Eggs 3 cup(s) , Carrot Grated 1 cup(s) , Nuts Chopped 1 teaspoon(s) , Vanilla Extract 0 as needed , Cream Cheese Icing Instructions: Sift together the sugar, flour, soda, salt and cinnamon. Stir in the oil. Add the eggs, one at a time, mixing well after each addition. Add carrots, nuts, and vanilla, mixing thoroughly. Pour into a floured and greased 13 x 9 x 2 inch cake pan. Bake in a 350ºF. oven for 30 minutes. Cool in pan. Spread with Cream Cheese Icing.
