Oven Swiss Steak
1-1/2 lb. beef round steak, cut into 3/4" thick 1/4 cup all purpose flour 1 tsp. salt 2 TB shortening 1 can (16 oz.) tomatoes, undrained, cut up 1/2 cup finely chopped celery 1/2 cup fine chopped carrot 1/2 tsp. Worcestershire sauce 1/4 cup shredded sharp process American cheese
Cut meat into 6 serving size portions. Combine flour and salt; pound 2 tablespoons of the mixture into meat.
Brown meat on both sides in hot shortening. Transfer meat to a 7" x 11" baking dish. Blend remaining 2 tablespoons of flour mixture into pan drippings. Stir in undrained tomatoes, celery, carrot, and Worcestershire. Cook and stir till thickened and bubbly; pour over meat.
Bake, covered at 350ยบ F., 2 hours or until tender.
