Hello Everyone! I am new here. I found this site last night, and I LOVE the recipes you all have posted! I was looking for Peanut Brittle and Fudge recipes, and I found GREAT ones here. The Rocky Road Fudge I made today came out wonderful, but I'm having a problem with the Peanut Brittle. I followed the instructions for Microwave Brittle to a tee, and my brittle's not hard. It was hard when I had it in the freezer, but now that it's out, it's limp and chewy. I don't know what's wrong. I changed NOTHING in the recipe. I'm sad. I wanted it to come out good..... If anyone has any experience w/this and has any advice, input, or suggestions, I'd be SO grateful to hear from you! Thanks again! TEXT

Hi RobbieBeth, Welcome to Nancy's Kitchen Recipe Message Board. I'm sorry the recipe for the Peanut Brittle didn't turn out to be as successful as the Rocky Road Fudge. Thanks SO much Shortcake! I'll go check out the tutorial now. I have The New Settlement Cookbook, and according to their directions, you only use 2 things for brittle: Sugar, and Peanuts! This book is pretty old, but I thought I might try it their way to see how it comes out. I'll read the tutorial 1st, and see what happens.

Shortcake, I just read the instructions from the link you gave me, and they seem to be identical to what I did. I can't imagine why my brittle is not as hard as it should be. I wonder if this has happened to anyone else, even when they've followed the instructions to a tee.
