Pork Chops with Apples and Stuffing 4 lean pork chops, 1/2 inch thick (pound if you like them really soft and tender!) Salt and pepper 1 tablespoon oil 1 can of Apple Pie Filling (cinnamon flavor variety, or you can sprinkle on your own to regular apple!) 1 pkg Stove Top cornbread stuffing mix Sprinkle chops with salt and pepper. Pre-heat your oven to 350 degrees, and heat the oil in a large skillet on medium high heat. LIGHTLY brown the chops on both sides. Put your stove top stuffing in to microwave while you are browning the chops. When done, lightly spray a 9X9 inch baking dish (or whatever comes closest to fitting your chops with a little space in between them) with Pam. Then open the pie filling and pour it into the dish, spreading around the apples evenly around the dish. Take the pork chops and gently settle each one into the pie filling. Take your stove top stuffing and fluff it up with a fork. Then by large spoonfuls, carefully place a portion of stuffing on top of each chop. Cover with foil and bake for 45-50 minutes. Remove the foil and bake for 10 more minutes. Serves 4.
NOTE: I do 6 chops at once in a 9X13 inch baking dish, and use 2 cans of apple pie filling, and 2 bags of stove top stuffing (leave stuffing on the side then too in a serving dish!)... After getting some TOUGH chops, I now pound even if it says they are lean... Nothing worse than a tough pork chop!
