1 lb pork fillet (diced) 2 Tbsp seasoned flour 2 oz butter 14 oz can of apricot halves, drained and juices retained 2 Tbsp Worcestershire sauce 2 Tbsp demerara sugar 2 teaspoons vinegar 2 teaspoons lemon juice 8 Tbsp water 8 oz long grain rice cooking time approx - 20 mins
Toss pork pieces in seasoned flour. Heat butter and fry pork until lightly browned. Cook rice in boiling salted water. Chop all but 3 apricot halves. Mix 8 tablespoons apricot juice and Worcestershire sauce, sugar, vinegar, lemon juice and water. Add any remaining flour to the pork and pour in the apricot sauce and chopped fruit. Bring to the boil stirring, Reduce heat, cover and simmer for about 15 mins spoon pork and sauce onto serving dish and border the rice around the meat - garnish with the remaining apricot halves.
