1 cup fresh orange juice 1 teaspoon freshly ground black pepper 1/2 teaspoon chili powder 1/2 teaspoon paprika 1/4 teaspoon cayenne Salt to taste 4 1-inch thick rib or loin pork chops (about 1/2 pound each) 2 tablespoons olive oil 2 tablespoons chopped fresh cilantro leaves In a shallow baking dish whisk together orange juice, black pepper, chili powder, paprika and cayenne. Season pork with salt and add to marinade, turning to coat, and marinate at room temperature 30 minutes. Heat oil in a large skillet until hot; add pork and cook until golden brown and cooked through, about 6 or 7 minutes each side. Transfer to serving platter and keep warm. Add reserved marinade to same skillet and heat until reduced in volume by half. Drizzle sauce over pork and sprinkle with cilantro. Serves 4.
