Hawaiian Meatloaf with Peanut Glaze
Bring a little tropical flare to your dinner table with delicious Hawaiian dish!
Prep. time: 10 minutes Cooking time: 50 minutes Serves: 4 to 6
Ingredients
MEATLOAF: 2 pounds lean ground beef 1 cup bread crumbs 1 (8 1/4 oz.) can crushed Hawaiian pineapple, , drained 1/2 cup chopped green bell pepper 1/2 cup chopped onion 1/4 cup chopped celery 2 large eggs, , beaten 1/4 cup milk 1/4 cup soy sauce 1 tablespoon finely minced fresh ginger 1/2 teaspoon salt 1/2 teaspoon black pepper PEANUT GLAZE: 1/2 cup orange juice 1/2 cup soy sauce 1/2 cup Jif® Creamy Peanut Butter 2 tablespoons rice wine vinegar 2 tablespoons brown sugar 1 teaspoon minced fresh ginger 1 teaspoon minced garlic
Directions
MEATLOAF
Heat the oven to 350 degrees F°.
Combine all of the ingredients in a large bowl and gently mix until well blended.
Put into a loaf pan and bake about 50 minutes, or until done.
While the meatloaf is baking, make the peanut glaze.
PEANUT GLAZE
Combine all ingredients in a saucepan and bring to a boil, stirring constantly.
Lower the heat and continue to cook until thickened.
Pour about 1/4 cup of the peanut glaze over the top of the meatloaf 5 minutes before the end of the cooking time.
Serve the remaining warm peanut glaze on the side. Enjoy!
Note: To re-heat in the microwave, use low or reheat setting to avoid burning the glaze.
