SAUSAGES WITH APPLES
6 large cooking apples ¼ cup currants 1 ½ pounds pork sausages 1 wineglass red wine 2 - 3 TBS sugar cinnamon
Cook sausages in water to remove most of the fat. Drain well and then cook in oven til nicely browned. Cover with pieces of apple, peeled, quartered and sprinkles with sugar, cinnamon and currants. Put a lid on the pan and cook gently in a 350* oven. When tender lift the sausages and apples out of pan into a serving dish. Pour the wine into pan stir carefully into the juices, boil for a minute then pour over the sausages and apples. Serve with mashed potatoes.
