Tender Chili Pork Chops
¼ cup flour ½ tsp salt ½ tsp pepper 3/4 tsp ginger 6 pork chops, 1 inch thick, all fat removed 2 TBS oil ½ cup minced onion 2 garlic cloves, minced ½ cup beef stock ½ cup chili sauce 3 TBS cider vinegar 2 TBS Brown sugar ½ tsp thyme
Combine flour, salt, pepper, ginger. Dredge chops in this and brown well in hot oil. Remove. Saute onion and garlic in drippings. Add remaining ingredients. Return chops to pan. Cover with sauce. cover and simmer 1 hour til tender, or bake at 300*F , basting occasionally. Serves 6.
