Here's a little something I tried - kind of got in the 'experiment' mood.
4 butterfly boneless pork chops 226g mushrooms, thinly sliced 1 med to large sweet onion (I use Vidalia) 1 tbs Rubbed Sage 1 small clove garlic, crushed 2 tbs flour 1/2 cup buttermilk 1/2 cup water Salt and Pepper to taste 2 tbs light olive oil 2 tbs Worcestershire sauce
In a small mixing bowl, mix the buttermilk and flour until smooth. Add the water, whip by hand and set aside.
Pat both sides of the pork chops with rubbed sage, salt and pepper lightly. Place them in a pan after heating the olive oil. Brown lightly
Add the onions, mushrooms, garlic and Worcestershire sauce. Simmer until onions are starting to become translucent. Add the buttermilk flour mixture. Stir thoroughly. Reduce heat and cover. Simmer for about 30 minutes.
