PORK ~ WITH BLUE CHEESE SAUCE [diabetic]
1 large pork fillet per person 4 cloves garlic chopped fine 3 tablespoons flour seasoned and in a clean plastic bag.. 1/3 cup white wine 150gms.. strong blue cheese ~ gorganzola - stilton - roquefort or such 1/2 cup light sour cream...
toss... meat whole in plastic bag with seasoned flour ~ till well coated... spray frying pan with oil spray and heat to hot.. place meat in frying pan and brown on all sides.. meanwhile heat oven to 200c-375f... spray small baking dish with oil.. add browned meat... and pour over the white wine... cook in the oven for 20 mins or until just cooked through in small pot a little oil.. and the garlic and fry until tender.. remove from heat add chopped or crumbled cheese, pepper and the sour cream. heat through ~ though do not boil.. as sour cream will curdle add the juice of the meat along with the wine.. stir through over low heat until all cheese is melted.. and the sauce is hot though not boiling..
slice meat about 1/2 inch thick and served with steamed vegetable e.g. carrot, leek, celery and potato with the sauce spooned over both meat and veg... should you wish to serve this for a dinner party.. the pork or chicken will keep covered and warm for a good while and you can boil the sauce without concern if you use... real cream and lemon... instead of light sour cream as cream and lemon will not curdle..
