1 Fully cooked ham steak cut into small pieces 1/4 cup chopped onion 4 Tblsp butter or margarine 2 Tblsp flour 1 20 oz can pineapple - chunks or crushed - drain but reserve syrup 1/3 cup water 1/3 cup firmly packed brown sugar 1 29 oz can sweet potatos, drained and sliced
saute onion in butter/margarine 2 to 3 minutes, stir in flour. Add reserved pineapple syrup and water, cook, stirring constantly, until it thickens. Stir in pineapple and brown sugar, top with potatos and ham pieces. Cover and simmer for 30 minutes, stirring occasionally. Serves 4.
