Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 teaspoon dried thyme -- crushed 1/4 teaspoon salt 1/4 teaspoon black pepper 2 teaspoons oil 1 3/4 pounds pork tenderloin 1/3 cup all-fruit peach spread 2 teaspoons Worcestershire sauce 1/4 teaspoon ground ginger
Heat oven to 425.
In a small bowl, stir together thyme, salt and pepper. Rub oil onto meat. Sprinkle herb mixture evenly onto meat. Rub in with fingers. Cover and refrigerate for 2-6 hrs.
Meanwhile, for glaze, stir together fruit spread, Worcestershire and ginger. Set aside.
Place pork on a rack in a shallow roasting pan. Insert a meat thermometer. Roast for 15 min. Spoon some of the glaze over pork. Roast 10-15 min, or until thermometer registers 160 degrees. Spoon remaining glaze over pork. Cover with foil and let stand 15 min before carving.
