Pickled Beets Recipe
3 qts. - beets 2 cups - vinegar 2 - cups sugar 2 - cups water 1 tbsp. mixed pickling spices
Boil beets until tender, peel in cold water and slice or quarter. As soon as beets are peeled and sliced, drop them into hot sterilized jars. Combine, vinegar and sugar and water, boil 3 minutes. Into each jar put 1/2 tbsp. mixed pickling spice. Pour in boiling syrup and seal. Put them in a canner and boil for 30 minute
You'll need about three pounds of beets per quart. Choose small beets if canning whole. 1 gallon yields 10 -12 pints 1/2 bushel yields 4 quarts 1/2 bushel yields 12 pints now for the answer how many beets/when you buy the beets at farmers market have them weigth 3 pounds of beets . count them if small you will have more. Beets with a diameter of 1 to 2 inches are preferred for whole packs. Beets larger than 3 inches in diameter are often fibrous hope this helps. i just buy a bunch lol and pray i have enogh. lol

From Nancys News Letter March 14th, 2003 For Tamara Pickled Beets and Eggs l cup sugar l cup vinegar Mix and cook in micro till sugar is dissolved. Add 2 cans or jars of beets, not pickled, just plain ones. Add boiled eggs and place in refrigerator for about 1 week. genie
